Blanc de Blancs sparkling wine is made from grapes of a champagne variety, which is rarely produced on its own. The grapes are grown on the fertile plains of the Kožbanjšček stream valley, in the Poje vineyard. The name means field in dialect, and that is also its previous use. 20 years ago, we turned it into a vineyard. The past utilisation of this land allowed the vines to grow well, making it a perfect place to produce superior quality sparkling wine.
The basic cuvée for this distinctly fruity, fresh, and light classic sparkling wine is Pinot Blanc. The many fine, persistent bubbles shimmer in straw yellow tones. The intense bouquet is sophisticatedly fruity (lemon, pineapple, apple, white peach), but is also accompanied by a hint of buttery and yeasty notes. The smoothness of the Blanc de Blancs style is expressed on the palate with a softness of flavour, a pleasant freshness, and a slight mineral nuance. 18+ months of maturation on lees.
A sparkling aperitif that, when accompanied by oysters or sushi, shows all the elegance of a Pinot Blanc.
