Grappa, meaning grape marc brandy, was secretly transported by our grandparents to neighbouring Italian villages and towns.
At Čarga, behind this name is a white Vinjak (a wine distillate) that has not been aged in a wooden barrel, but in a stainless-steel tank for at least 18 months.
The base wine for Vinjak Grappa is made from the fine-pressed must of the sparkling wine and the lees from the first racking of the must. It is supplemented by the residues from the disgorging of the sparkling wines, which are rich in lees and give the Grappa a pleasant, round and mellow taste.
It is double distilled in classic copper stills during the cold winter months, separately for each fraction, where only the best “flower” is captured. After a longer period of maturation (18 months), the white vinjak is bottled.
