Cabernet Franc was brought to Brda together with Cabernet Sauvignon and the trend of world-famous varieties. It is a rich red wine with a characteristic spicy aroma. It is rarely used as a varietal wine, more often in blends. At the Čarga winery it has been produced as a varietal wine since 1994 and was later combined with the Ta Star blend.
It is grown on the south-eastern terraces of the Pongrat and Vrtič vineyards and on the western terraces of the Draga vineyard. We leave the Cabernet grapes on the vines until they are fully ripe, which means that they are the last grapes to be harvested in our winery. The ripe grape skins ensure a prolonged maceration, which allows the mature aromas and tannins to be released, since they are important for the long maturation of the wine, first in the cellar and then in the bottle. Maturation takes place for over 18 months in barriques and large wooden barrels.
Medium deep ruby red in colour. Very spicy in the bouquet, structured and mature. A varied blend of black pepper, dried herbs, and ripe red and black fruits. It’s dry, mature, spicy, with a generous piquancy on the palate, which is the dominant sensation during tasting, but also lets the other aromas come through. The acids are moderately high, and the tannins are mature. A fine Cabernet Franc.
