Cabernet Sauvignon took its place among and on the hills of Brda about 25 years ago. Planted on sunny terraces, it produces structural wines with good ageing potential. It is often found as a varietal wine, and in combination with other red varieties.
The grapes are grown on the south-eastern terraces of the Pongrat vineyard. In our winery we allow the Cabernet grapes to remain on the vines until they are fully ripe, which means that they are the last to be harvested. The ripe grape skins ensure a classically prolonged maceration, which is typical for red wines, resulting in a deep colour and mature aromas and tannins. All these are key factors in the long maturation of the wine in the cellar and then in the bottle. Malolactic fermentation is also carried out. The wine matures for 18 months in barriques and large wooden barrels.
The colour is a deep ruby red with violet hues. It seduces with an intense bouquet of beautifully ripe dark red berries, coffee, and chocolate. A full-bodied and structured Cabernet Sauvignon with a bold body, a long aftertaste, and elegant, soft, and sweet tannins. Recommended with all types of red meat, mature cheese, and game.
