Pinot Noir has had a place in our vineyards since 1993. Most of the grapes are used to produce rosé sparkling wines.
We do produce Pinot Noir only in exceptional years and from selected grapes from the lowland vineyard Njiva and from the terraces of the Draga vineyard. The harvest is followed by a long, classic 14-day maceration and, after fermentation, malolactic fermentation takes place. The wine matures for 12 months in American and French barriques.
Pinot Noir is described by many wine connoisseurs as an exceptional and elegant white wine disguised as a red wine. Ours has a typical ruby colour with a hint of brick red. The ripe bouquet is dominated by cherry aromas. Maturation in wooden barrels gives the wine a softness of mature, resolute tannins and a warm, long finish. It goes well with simple red meat dishes, cheese, and meaty fish (salmon, shark).
