Jakot, or also Friulano, which originates from neighbouring Friuli, is the second most famous variety of Brda. Its origin is in France, where it is known as Sauvignonasse or lower quality Sauvignon.
This variety produces exceptional results on the marl hills in Brda. Slightly higher alcohols, lower acids and a rich extract are the characteristics that give this wine its greatness and make it an excellent still wine.
In our winery we select grapes from three different vineyards (Pongrat, Draga and Muharjevo).
When the vineyards on the plains reach 15% of noble botrytis, and the grapes from the terraces reach over 14% of alcohol, the grape harvest begins.
Grapes from the lowland and terraced vineyards are vinified separately, usually with shorter maceration for the grapes from the lowland vineyards and longer maceration for the grapes from the terraced vineyards.
The wine is fermented in stainless steel and concrete tanks and, for a short time also in barriques. The wines are aged on fine lees for at least 6 months and are then carefully blended into the JAKOT wine.
This wine has a characteristic golden yellow colour and a pronounced mature bouquet due to the late harvest of ripe grapes. On the nose, there are notes of mature melon, banana, and almond, as well as nuances of hay and dried wildflowers. The wine is elegant in body and has a pronounced mineral note. It can be served with Brda ham, prawns, pasta, or grilled vegetables.
