Sauvignon Blanc has achieved a great reputation in recent years in neighbouring Friuli and in Brda. This climatically homogeneous region is characterised by its exceptional micro-climates on marl or river deposits in narrow valleys, where nights are cool and days warm.

The Sauvignon of our winery comes mainly from the Muharjevo vineyard, which is in the microclimate described above. This allows us to delay the harvest, as the desired sugar level is reached later, while preserving acidity and aromas. A small part of the grapes come from old vines grown on steep marl terraces.

Vinification is carried out separately, usually on the same day as the harvest: the first part of the must is obtained by pressing whole bunches, which produces a reductive must (minimal oxidation), while the second part of the grapes is destemmed, pressed and, for a short period, cold macerated. The fermentation is carried out separately in concrete and stainless-steel tanks, with different strains of selected lees. Afterwards, the wine is further matured on fine lees. The wine from the two vinifications is joined before bottling.

The wine has a delicate golden yellow colour with an expected pronounced aroma of herbs, tomato leaves, pepper, and hay, which blend beautifully with the aromas of ripe yellow fruit, in particular grapefruit. This dry, mineral wine with a complex character and ripe acidity is perfect for summer days. Frtalja” with spring herbs (an herb omelette – a typical gastronomic speciality of Brda), pasta with tomato and pepper sauces or asparagus dishes will be unforgettable when enjoyed with Sauvignon.
