Wine from exceptional vintages and selected vineyards.
The white Ta Star – “The Old Man”, owes its name to the old vines of Chardonnay (45%), Pinot Blanc (45%) and Sauvignon (10%), which are between 35 and 40 years old and are part of the Pongrad vineyard. The extremely low yield of the marl soils contributed to the high ripeness of the grape skins, which are cold macerated for 48 hours. This is followed by fermentation with autochthonous lees in barrique barrels, where the wine matures for 8 months.
Bottled in February 2017.
The wine has an intense golden yellow colour. The multifaceted aromas are accentuated by notes of ripe fruit, honey, and spices, developed during maturation in French oak barrels. The palate is bold and full-bodied, yet balanced, elegant and with a firm structure, giving it a long finish. It is the perfect complement to grilled fish, steak or even game meat.
